When we process an animal, the beef is sold through Wagyuru and the suet is utilized by us, Tajima Tallow.
In an industry full of white-label mass production, this level of transparency and hands-on control is almost unheard of. We do not send our products to a packing company, and we do not buy mystery tallow. Everything is made in-house, and I can tell you exactly every single step of the process.
